Today is a sunny winter day in Belgium and when there is a sunny weather everything be active and ready for a lovely morning also the weather refers to a warm winter, can you believe in the middle of december we have a 12°C ! and since my kids are in school, i gave myself a delicious healthy Banana Oatmeal Pancakes with cream cheese sauce breakfast and enjoyed it!
Oatmeal banana pancakes
Prep time: 5mins
Cooking time: 15mins
Yield: 8 pancakes
INGREDIENTS
1 Banana
1 Egg
½ Tsp vanilla
½ Cup milk
1 Tbsp Vegetable oil or melted butter
¾ Cup Oatmeal (80 grams)
1 Tsp Baking powder
For cream cheese sauce
1 Tbsp cream cheese
1/2 Tbsp powdered sugar
3 Tbsp milk
INSTRUCTIONS
- In a large bowl, mash 1 banana make sure no large lumps.
- In a small bowl, beat one egg with vanilla,dd it with milk into banana, whisk all together.
- In a small bowl add baking powder, salt to ground oatmeal.
- Add oatmeal, gradually while keeping whisk, add vegetable oil. Whisk until you have a smooth pancake batter.
- In a hot skillet on a medium heat, add 1/4 cup of pancake batter wait until the edges well hold, flip to other side until golden brown, remove from heat. Repeat.
- For cream cheese sauce for my pancakes but you can serve yours with fruits or with maple syrup.
For cream cheese sauce
- In a small bowl, cream the cheese with powdered sugar.
- Add milk gradually Until you reach a creamy crem cheese mixture or the desired mixture.
