Part of what makes cooking fun for me is innovation. I like to look around and see what I have in the kitchen and come up with a recipe that way instead of finding a recipe and then going out and buying the ingredients. It definitely helps when I'm trying to use up whatever is already in the fridge or cabinets.
Our friend Mario came to stay with us a few weeks ago and he ended up sticking around for a few days. He went and purchased some food ingredients, mostly stuff that can be used to make tacos, and salsa. He left some of the salsa and his corn tortillas behind when he went back home, so I've been using those to come up with my own recipes; recipes that are definitely Mexican inspired since I am still missing all of the delicious food I was able to eat while visiting Mexico.
Today I decided to make some tacos. They're pretty simple and I was missing stuff that I would've liked to put in them, like tomatoes for example, but I made do with what I had and I think they came out pretty damn delicious. <3
Here's the recipe:
- One small cast iron skillet.
- enough vegetable or oil to almost submerge the patty
- 1 Gardein vegan chipotle black bean patty
- half of a small ripe Hass avocado, thinly sliced
- about a tablespoon of fresh chopped cilantro
- 1 handful of mixed spring greens
- 2 thinly sliced rinds from a small, red onion sliced in half
- Sir Kensington's Chipotle Mayonnaise
- Mario's secret salsa
- 4 corn tortillas
- salt & pepper
On high heat, I heated up the oil in the cast iron skillet until hot. I placed the frozen patty in the oil and left it on each side about a minute and a half, flipped it four times until it was cooked. I should've took it out after the third flip LOL. Once it was cooked, I put it on a plate and chopped it up and then made it into crumbles with a fork.
I heated up the four corn tortillas in my toaster oven until they were hot but not crunchy. I spread about a tablespoon of the vegan mayonnaise on each tortilla and then I placed a quarter of the patty crumbles on each tortilla. The patty crumble looks dark because I burnt it. It should not be that dark. It was still delicious but i'm sad that I let a guy so crispy & burnt on the edges. It won't happen again LOL
I arranged the rest of the ingredients on each tortilla so I would have minimal spillage when eating. I used about a tablespoon to a tablespoon and a half of Mario salsa on each taco after I placed all of the ingredients. I sprinkled with some salt and pepper and that's it!

They were delicious. One thing I am going to change next time is I'm probably going to add some garlic salted black beans to the mix. I think it'll add more complexity and depth to the overall flavor.
