Preheat oven to 375˚F (190˚C). Line a baking sheet with parchment paper.
In a giant bowl, toss along sweet potato, canola oil, salt, and pepper. Dump onto the ready baking sheet, organize in a very single layer and bake for 30-35 minutes, stirring often.
