Breath of the Wok, aka 鑊氣 (wok hei), is one of the key factors to decide whether a stir-fried dish is delicious or worth dying. Of course, all the fundamentals must be met to be considered as delicious at the first place :)
This afternoon, I have decided to pay a visit to Chuan Lee Restaurant's famous Char Kuey Teow. Why here? They are famous for its cheap yet worth dying char kuey teow! Yes, wok hei is infused with it!!
Yeap, that's the chef you should be looking for...
Normally, you will see a young lady next to the uncle chef who will be taking order. She will then "code" the plate based on what you have order and if you have any special instructions like don't want certain ingredients or chilies, etc.. Pay attention to how she "codes" the plate if you are interested :)
Then, the cooking process started... Plate by plate, uncle chef never rush it even when there's plenty of us waiting for food... Can you smell it already? XD
After waited for approximately 20 minutes, food is finally here!!
