Hi Everyone
First i want to thank all of you for taking time to read my post, I always wanted to have my own foodie blog where people can share opinion , ask questions and have general discussion about food, i'm not too sure what you guys may be interested in and what would you like me to focus on so any comments and suggestions would help. I will post only recipes that i've twisted and adjusted to my personal taste.
Today's recipe is very easy and the result is worth trying, also will save you some cash.
INGREDIENTS:
4 Fresh Red Chili ( With the seeds )
4 Cloves Garlic
4 cm. Ginger Root (Peeled)
100 ml. Water
4 Tbsp Dry Chili Flakes
340 ml. Rice Vinegar ( or white wine vinegar )
700 gr. Caster Sugar
50 ml. Fish Sauce ( i use brand "Squid" ) Optional!
1 tspn. Salt
1/2 tspn. cornflour ( use more if you like it thicker)
INSTRUCTIONS:
- Blend the fresh chili, garlic, ginger and water, set aside
- In heavy bottom sauce pan mix Vinegar , Sugar , Fish sauce ( if using ), Salt and Dry chili flakes , Whisk to combine
- Bring it to simmer on medium heat
- Add blended chili , garlic and ginger paste
- Simmer for 15 more minutes
- In separate bowl mix the cornflour with 2 Tbsp. cold water until dissolved
- Whisk dissolved cornflour in the sauce
- Reduce the heat to low and simmer for future 5 min While stirring frequently
**Remember, the sauce thickens as it cools as well.
**If you are vegetarian or allergic to fish replace fish sauce with light soy sauce
**If you like it spicier increase dry chili flakes contend and use spicier fresh chili such as birds eyes
** After cooling to room temperature ideally will have honey like consistency if its too thick add a little extra water to thin it out.
** As longer it stays better it gets so make sure you make enough to last.
