This is the ultimate Lao Food for me. From restaurants to homemade, they are all good. Though any meat can be used, in this case it's beef, one of the more traditional meats. With the beef and tripe, added to this is a huge varieties of herbs, greens, peppers, and sauces to make this dish so unique and the flavors just explodes. It is especially good with some sticky rice. And with this dish, its ones of those that is the spicier it is, the better it is.
