Hi guys,
I have the perfect recipe for you to treat yourself during a busy workweek. This recipe be made start to finish in 15 minutes or less. It is made with oatmeal instead of flour for added health benefits. The blueberries add a delicious sweet and tartness that compliments the pancakes perfectly. Enjoy!
Ingredients:
- 1 C oatmeal
- 2/3 C milk, non-dairy milk, or water
- 2 spoons of honey, maple syrup, or agave nectar(adjust sweetness as desired)
- dash of salt
- 1/4 teaspoon baking powder
- 2/3 C of frozen blueberries
- A few teaspoons of butter or oil for cooking
Instructions:
- Combine oatmeal, sweetener, and milk in blender. Blend until oatmeal is ground up and everything is combined.
- Pour into a preheated pan
- Cook on medium to medium-high heat until brown and crispy on each side
- Warm/thaw frozen blueberries in microwave or on stove in separate pan
- When pancakes are done, layer with blueberries and serve. Enjoy!
Optional: drizzle pancakes with syrup or other desired sweetener and butter
