I have been making a lot of breakfast food here lately, looks like. This is definitely something different since I am not a breakfast person myself, well, unless it's a midnight visit to a Coney, then count me in, y'all! But it doesn't mean I can't enjoy me some pancakes at 11 AM occasionally, and these ones a delicious!
Luscious pomegranate, velvety texture and creamy Greek yogurt, yum!
Ingredients:
- 1 egg;
- 3/4 cup flour;
- 1/4 cup unsweetened cocoa;
- 2 tb. spoons sugar (more if you're a sweet tooth);
- 1/2 teaspoon vanilla extract;
- 1 1/4 cup milk;
- 2 teaspoons baking powder;
- a pinch of salt;
- chocolate chips (optional);
- cooking oil (as needed).
Toppings:
- pomegranate seeds;
- Greek yogurt;
- honey or maple syrup.
Directions:
In a mixing bowl whisk together flour, sugar, salt, baking powder, cocoa. Add in milk, egg (lightly beaten), vanilla extract. Continue whisking until all of the ingredients are well combined.
Preheat your cast iron skillet and fry pancakes at a medium heat until fully cooked. Stack them up. Serve and enjoy!
