Back in the D to the garden full of herbs and veggies!
My husband and I made it back home last night after being away in Eastern Kentucky for almost three weeks! It was my first time there during summer and it was a lot of fun, we got to check out plenty of cool spots and I am going to talk about it more in my future posts (sorry, gotta edit the photos first).
Right now though, I would like to share a recipe of a simple summer salad you can make if you grow a small garden. This year we didn't plant a lot of things, just a couple pepper plants, some cherry tomatoes and cucumbers. All of the herbs in the photos came back themselves from last year which of course I am very happy about.
Here we go!
Some tomatoes and peppers are already ripe and ready to be picked!

Same goes for parsley and basil :)

So, to make this simple and light dish you are going to need:
- a couple sweet peppers;
- a few cherry tomatoes;
- some parsley;
- some basil;
- a small cucumber;
- extra virgin olive oil;
- salt and black pepper to taste.
Slice and dice all of the ingredients, place them in a bowl, add salt and olive oil, maybe some balsamic vinegar if you're into it and toss.
