Food is just one thing man cannot do without daily. You may not be a foodie, but you will sure have to eat daily to ensure your body system functions effectively.
Lately,I have been craving for unripe plantain porridge. Like if I had my way, it would serve as my breakfast everyone morning just like it did today.
let me tell you a little about unripe plantain.
When some folks visit the market to buy plantain, they avoid the unripe plantain and buy the ripe ones or if they eventually buy the unripe one, they keep it in their house till it gets ripe before they cook it. Little do they know that unripe plantain is more healthy than ripe plantain, it contains less sugar and it is best for diabetic patients which makes it an important addition to a healthy living diet plan. Research has also shown that unripe plantain helps to build and strengthen the bones, muscles and teeth. There are many ways to cook unripe plantain, but I prefer it porridge.
Here comes my recipe for cooking unripe plantain porridge;
- 3 unripe plantain.
- 1 smoked fished(can't cook it without fish o, I love fishππ)
- 1 large onion.
- 2 cubes of maggi seasoning.
- Pepper to taste( dry of fresh pepper)
- Salt to taste
- One full cooking spoon of palm oil.
- Sliced scent leaf(vegetable)
- 1 full table spoon of grinded cray fish.
How to prepare it.
- Wash, peel and cut the plantain into small sizes.
- Put them in a cooking pot.
- Add the smoked fish which you should have washed before now.
- Add sliced onions.
- Add maggi seasoning.
- Add the grinded crayfish.
- Add pepper to taste.
- Add salt to taste.
- Add palm oil.
- Then put water to slightly cover the plantain.
- leave it to cook until the plantain is soft.
- Add the sliced scent leaf and leave it to boil for 2 mins.
- Yepee, your unripe plantain porridge is ready. You can stir and serve your delicious meal.
Nutritional content of unripe plantain porridge.
It is a good source of fibre, vitamin B-complex,minerals like magnesium, potassium,manganese and copper. It's a good source of animal protein(from the smoked fish). It is relatively low in carbohydrate and the fibre content helps to reduce cholesterol; for people like me that love to watch my weight.ππ.
