This recipe is easy to prepare and they are very delicious even though they are made with carrots.
Ingredients:
2 1/2 cups of flour all use
3/4 cup corn oil
3 eggs
1 1/2 cups of sugar muscabado, if you do not have it you can use white sugar
3 large carrots, grated
1 tablespoon of cinnamon
1/4 tablespoon of cloves
1/4 tablespoon of nutmeg
2 tablespoons of baking powder
rind of 1 lemon
1 spoon of vanilla
1 teaspoon of salt
Preparation of the mixture:
beat the oil with the sugar and then add 1 egg, continue beating until it turns white and then add the remaining 2 eggs and keep mixing till it gets creamy
add the species
add the flour, salt and baking powder and beat a little, and now stop beating with the blender
add the grated carrots and lemon, mix and put the raisins spread with flour and proceed to fill the paper containers
cook and take care not to burn
Observations:
- the best oil is corn oil because others smell very strong and the smell of the species is reduced
- you should not beat the carrots with the blender
- With the sugar muscabado the cupcakes are of better color
- the best decoration is made with cream cheese, I used Italian meringue with glucose
