It's official guys, tomato season is in full, delicious swing. Around here, that means one thing: Epic Breakfasts.
I made my signature eggs last Sunday and they are a perfect picture of this season.
Huevos A La Lily
Sautee veggies until soft - Onions, Shiitake Mushrooms, Garlic, Sun Gold Cherry Tomatoes, Salt & Pepper & Spices
Crack eggs on top - we use duck eggs
Put the lid on, turn down the heat to low. Simmer and steam the eggs to desired doneness. I leave the yolk very runny to preserve the healthy gooey egg nom, I wait until the whites are just done
Sprinkle herbs on top & grate cheese, I used Munster here
Serve on a bagel, with bacon and borage flower garnish
