I absolutely love this recipe! Last weekend I wanted to use two bananas I had because I didn’t want them to go bad. I thought about making some banana muffins, but I didn’t want to bake or cook anything with flour. Funny enough I wanted to eat pancakes, and since I was hungry I think a light bulb went off. Why don’t I try to make a super simple pancake using gluten free oats and the ripe bananas? It won’t hurt to try it out and while I do it I will record the recipe to share with everyone.
I am not going to lie, I was so impressed with the taste! I wanted more, so much more. With this recipe you get about 3 pancakes, which is enough for one person. The biggest tip to make sure the pancakes come out amazing is to make sure your bananas are pretty ripe and very sweet, it makes the pancakes taste that much better.
Even with recording the recipe, which usually slows me down, I was done with the pancakes in about 15 minutes!!! I am now obsessed with the two ingredient banana pancakes. Really, just two ingredients, and the best part is that they are vegan, gluten free, vegetarian, plant based, and super healthy.
I cooked some apricots I had, at slow heat, and then added some honey and I was in heaven. Seriously, I can’t tell you enough about them, they are by far one of the best pancakes I’ve had (at least healthy ones)Without further adieu here is the recipe and don’t forget to check out my YouTube video here!
Two Ingredient Banana PancakesIngredients
- 2 Bananas
- 1/2 Cup Oats (Gluten Free)
Cooking Directions
- Heat up a pan
- Peel the bananas and add the 1/2 cup of oats
- Blend everything until is uniform
- Pour the mix into the pan
- Cook for 3 minutes at medium heat
- Flip the pancake and cook for another 3 minutes
- Serve hot with fruits and honey (or your favorite topping)
