Thank you for a good post. Just want to add, marmalade and jam are not the same (except for the added peels in marmalade). The water activity is lower in the marmalade, which make it more resistant to mold. If the marmalade starts to mold you can simply take a spoon and remove the mold and the marmalade can be eaten. This can't be done with jam.
