I’m in full-swing summer mode right now, being that it’s in the 90’s today and will continue to be for the next several months. That’s the joy of living in Florida! There’s still plenty of time for the beach, enjoying dining outside, as the temps lower quite nicely at night, and sipping on refreshing cocktails to cool things off a bit (usually while overlooking the ocean). Have I made you jealous yet? 😊
So today I’m dedicating this cocktail to summer! Summer means there are plenty of fresh fruits and produce in the stores so it’s the best time to make these light drinks full of summer’s peak of the season bounty. I couldn’t resist the beautiful strawberries I saw while shopping and knew they were going to be the base for my cocktail. Of course, you could also change it up and sub raspberries or blackberries and it comes out just as delicious.
It’s really simple to make too! Just place the strawberries in the bottom of a tall glass. Muddle them, that’s a big word for mushing them with a fork, add a squeeze of lime juice, some light rum, triple sec and top it with a little champagne. See, what did I tell you – easy! And delicious! I mean, how could anyone go wrong with that combination?!
I think it’s happy hour somewhere so here’s to a happy weekend that starts with this light, bubbly and totally refreshing cocktail! Cheers!
Strawberry Rum Fizz
Total time: 10 minutes
Ingredients:
3 very large strawberries
1-1/2 oz light rum
1/2 oz triple sec or Grand Marnier
1/2 oz lime juice
Champagne
Directions:
- Muddle strawberries in the bottom of a cocktail shaker or pitcher. You can also mash them in a bowl or roughly blend them in a blender.
- Pour in liquors and lime juice. Stir.
- Divide mixture between 2 tall glasses filled with crushed ice. Top with champagne.
- Garnish with a strawberry and/or lime wedge.
Makes 2 cocktails.
