We ended up with a product titled peanut powder(intended and so far used as a smoothie additive), and this morning I googled how to use it. I'm honestly surprised at the versatility of the product so I tried it out in these pancakes and was floored. I'd tried to make a peanut butter pancake recipe in the past, and failed because of the thick and sticky peanut butter texture. This was the ticket to a nicely peanuty pancake without a tough texture from overmixing.
What you need(For 2-4 people):
9 oz all purpose flour
1/3 c sugar
3 T peanut powder
1 T baking powder
12 oz milk
2 eggs
2 T melted butter
1 t vanilla extract
Start by adding the flour, sugar, baking powder and peanut powder to the bowl and combine. Add the milk, eggs and vanilla, stir to combine then add the melted butter and do the same.
This is what my batter ended up looking like, slightly more yellow in color than usual. It smelled AWESOME.

Just start by pouring some onto an oiled skilled, I prefer to use butter. I start the griddle off at medium heat, but it always ends up and stays at the low position during most of the cooking process. Sprinkle a few blueberries around and allow that first side to cook. Flip it like usual, allow the other side to cook. Rinse and repeat until finished!
