Once upon a Sunday, Mama was feeling quite pooped following a marathon run after her latest Lily's Cottage holiday guests all checked out on the same day. Both her units had to be prepared for new guests arriving later the very same day.
The staff were still away enjoying their year end vacation; yes, she knows that other bnb's do not give their staff leave over the busiest period, but she just does not have it in her to deprive them of family time. So Mama & Papa Bear, (who still has to start blogging!), did their thing, ensuring everything was spic and span again.
The youngest fledgling had left and it now was only Mama, Papa Bear & Granny Bear who had to be fed.
Mama looked in the refrigerator and quickly devised a meal in a pan - Smoked Chicken Kedgeree. She knows it should be Haddock, but she certainly was not getting into that car now to go and buy one little box of frozen Haddock! Smoked Chicken would have to suffice, and it could work :)
The ingredients:
1 cup of Basmati Rice (Mama's absolute favourite rice), cook as usual (or use any other rice you fancy), 1 Onion, sliced, 4 Spring Onions, diced, 2 Tomatoes, diced, Smoked Chicken cubed, Cheese cut into cubes, 3 hardboiled Eggs, halved, Fresh Sweet Basil if you have, Butter, lots of it!
Melt butter and a little oil in pan, sautee Onions, add Spring Onions, then the Tomatoes and some chopped Basil leaves.
Season to taste.
Add the cooked rice & chicken and toss to mix.
Place eggs on top, then the cubed cheese.
Cover with a lid to melt the cheese, sprinkle with Smoked Paprika & serve.
This easy-peasy dish invented by Mama was absolutely delicious and sure to become a new firm favourite with the fledglings when they visit next.
Mama's plating still needs some work, she served this dish with young beetroot, Papa Bear's favourite.
