Feeling totally exhausted after a crazy week at Lily's Cottage, and a tad melancholic following a blitz visit by the youngest fledgling, the best therapy for this Mama was to get stuck into the pots.
Why do I call it a blitz visit, you ask? You will understand if you saw the clothing that flew out of that suitcase, looked like your worst laundry nightmare! To make matters worse, just about every item of clothing needed mending of some sort; be it missing buttons, hems half out, whatever goes wrong with clothes, will go wrong with this particular fledgling; high maintenance indeed!
Mama still finds it amazing how her two fledglings are such total opposites; they sprung from the same hen after all :)
Back to Mama’s kitchen therapy.
She was thinking of hens, eggs hatching and cute little chicks, when she opened the refrigerator and all she saw were eggs, but not much else! Her best option was making an omelette, but one with a twist. She decided to start with the filling, instead of the traditional way, thus making an upside-down omelette, exactly how she is feeling this morning!
Mama rummaged through the refrigerator and went foraging in her herb garden.
She managed to scrape together the following:
3 eggs, chopped ham, chopped mushrooms, a diced baby leek & 1 celery stalk from her garden, chopped tomatoes, cheese, butter & parsley for garnishing.
She flash-fried the leeks and celery in some butter, adding a little olive oil to prevent burning. This is her secret addition, please don’t tell anyone ;)
Then she added the mushrooms and lastly the tomatoes, seasoning it to taste; another secret ingredient is some fresh basil leaves.
Mama placed the eggs into a jug and added her favourite seasoning. Lastly she added water - half an eggshell full of water per egg (yes, you’ve heard right, it's water; this makes your omelette fluffy). She beat the eggs with a fork, and poured it on top of filling ingredients in pan.
Cover pan with a lid, turning down the heat.
Remove lid when omelette has set.
Now comes the tricky part, especially when you use a large pan as Mama did!
Firstly sprinkle half the cheese on top, then carefully turn the omelette over and sprinkle the balance of the cheese on top. Garnish with parsley & cherry tomatoes, sadly Mama had none in her refrigerator nor in the garden, needed some color on that plate :(
This omelette was large enough for two servings, and oh so yummy with all the little bits of caramelised leeks.
Mama says you can use whatever your heart desires in your omelette - anything meaty or fishy, peppers, frozen corn/ peas/ spinach.
Or be daring and make a sweet omelette by sauteeing fruit: diced apples, bananas, strawberries or blackberries, adding sugar to the eggs and sprinkle the cooked omelette with castor sugar, very yummy indeed!
I do hope Mama inspires you to get busy in the kitchen when you’re feeling down, it truly works wonders, and importantly, let Mama know what you’ve managed to whip up in your kitchen for your own little fledglings. Before you know it, they will have fled the nest :(
