Hey everyone, just a quick post today to show you a really quick light bite I whipped up!
When you go vegan it can be difficult to think of things to snack on (that aren't Doritos or Oreos!)
This is a great light snack that has lots of flavour π
You can use whatever you like really, I found some great tasting slices and mayo at my local Holland & Barratt store. You can find many tasty vegan options to add to this snack in your nearest health food shop.
What you'll need:
- Rice cakes
- Vegan mayo ( I used garlic mayo)
- Veggie slices ( I used Veggie Deli Sage & Onion Slices)
- Sliced tomato
- Fresh spinach leaves
- Ground black pepper
Instructions:
- Spread some vegan mayo onto the rice cakes.
Lay some veggie slices on top.
Add a little more mayo.
- Slice some tomatoes.
Add the tomatoes and spinach leaves.
Top with some black pepper.
Enjoy!
It's a great little between-meal savoury snack, and I'm just obsessed with these Sage & Onion slices- they're so yummy and great in a sandwich.
