Sometimes comfort food can be healthy and very simple to make.
This was a quick fast easy meal that made me feel oh so good! Azuki bean noodles topped with fresh tomato sauce.
Tomato Sauce:
5 very ripe Roma or cherry tomatoes
2 cloves of minced garlic
2 basil leaves chopped
1/2 tsp Pink Himalayan salt to taste
Pepper to taste
1tsp of olive oil (optional)
Noodles
Sautéed the garlic in 1tbs of water or the tsp of olive oil in a pot on medium-high heat (I prefer water but it doesn’t make much of a difference), cook the garlic until lightly golden and start to give off a yummy aroma. Then throw in the ripe tomatoes, I throw them in whole and cover the pot for 5-8 minutes on medium-high. After 5 mins the tomatoes are soft the peel slides off and smash them down. Add the basil leaves in, stir and you can blend with a hand blender or keep smashing and smooshing away (that’s my fav).
The noodles cook really fast so 5 minutes into your sauce add the noodles to a pot of boiling water, they take anywhere from 5-7 mins
Top your noodles with the sauce and enjoy!! Bona petit!!
