Ravani is a delicious syrupy traditional Greek dessert, with an amazing texture, flavor and smell!This is an old family (mouthwatering)recipe, that my dad used to make in summer.
I really love this dreamy sweet semolina cake, called ravani or revani.I made it before two days, in my name day and all the pieces gone at the same day!It is fluffy, moist, light, with a delicate aroma and suits perfect with ice cream!
ingredients:
-375 g melted butter
-1 cup granulated sugar
-1 ½ cups all-purpose flour
-2 cups fine semolina
-6 eggs (room temperature)
-1 small cup Cognac(or another brandy)
-vanilla extract
-2 teaspoons baking powder
-lemon zest(for topping)
-ice cream(vanilla flavour or kaimaki) for serving
for syrup
-4 cups water
-3 cups granulated sugar
-rind of 1 lemon
method:
-preheat oven to 180 C (350 F)
-in a bowl combine dry ingredients, flour, semolina and baking powder
-tranfer the butter and the sugar to a mixer and stir to combine well
-in the butter mixture, add the egg yolks and mix until combined
-add cognac, vanilla extract, the mixture with dry ingredients and the egg whites, until combined
-tranfer the mixture to abaking pan that has been greased with butter
-bake for almost an hour
-when ready, remove from oven
-set it aside for some minutes
-pour the cooled syrup over the cake with a tablespoon( gradually)
-when ready, refrigerate to chill(for one night is the ideal)
-cut in to pieces and serve with ice cream and lemon zest
for the syrup
-place a pot over medium to high heat
-add the water, sugar and lemon rind and bring to a boil
-when the sugar melts completely, remove from heat and set aside to cool
