Mine Gingerbreads cookies I bake every year just few days before Christmas.
I personally likes soft gingerbread cookies, if they are more likely to be harder, I put them in for a day or two in a close dish with a couple cut pieces of apples.
This are Gingerbreads cookies as I do, according to my grandmother's and my mother's recipe.
The ingredients are as follows:
* 30 dag forest honey,
* 20 dag butter,
* 10 dag of brown sugar,
* 2 eggs,
* 50 dag of whey or whole wheat flour,
* 25 dag of white flour,
* 10 dag of ground walnuts,
* little cinnamon,
* 1 teaspoon baking soda,
* 10 dag chopped candied orange and lemon peeals (Optional).
Place the honey in the pan and heat to 50 ° C, mix the butter and then when is cold we add the sugar and eggs.
In another dish, mix the remaining dry ingredients and then mix the honey mixture.
Dough should rest for at least an hour, even better if you let it stand overnight.
It can be shaped as desired (circles, mushrooms, spruce ...), it can be cut with talc, bake it for about 15 minutes at 180 ° C.
If you want to decorate the gingerbread cookies, with white sugar ice, I do this by mixing 1 white and 250 g of powdered sugar.
Gingerbreads cookies are very soft and good, but after two days they are much better, because at that time the aromas are developed.
This is the first time I did my gingerbreads cookies so that I only added cinnamon. Otherwise every year I mix what's at home, from cloves, cinnamon, ginger, lemon grass, orange peel, lemon peel ..... Although a pin of cinnamon is written in the recipe, I give it 2 tsp.
