I don't think I know of anyone who DOESN'T like chicken schnitzel. After getting home from work on a Friday, its usually my go-to dish as its quick, easy and my Wife's favourite.
To me, schnitzel is not about being really thick, its about being the right thickness of around 5-7mm, and juicy! The super easy recipe is below...
INGREDIENTS:
1 chicken breast
flour
1 egg
Bread crumbs
Dried parsley
lemon rind from 1 lemon
Ground paprika
Salt
Pepper
METHOD:
- Cut the chicken breast into 5mm slices along its length and season.
- In 3 bowls, put flour in one, the raw egg into the second (beaten), and thirdly bread crumbs with the lemon rind, paprika, salt, pepper, and dried parsley.
- For each piece of chicken, coat in flour, then egg and lastly the mixed bread crumbs.
- Shallow fry in olive oil on a medium heat, 2 minutes the first side, and roughly 1-2 the second side and set aside on a paper towel to soak up the excess oils. Season and serve with fresh lemon :-)
