Gastronomy is the relationship between food and culture, art of preparing and serving rich or delicate and appetizing food, a style of cooking from particular region and the science of good eating.
Ok, thanks, Wikipedia.
The word "gastronomy is derived from Ancient Greek "stomach", and "laws that govern", and therefore literally means "the art or law of regulating the stomach". Gastronomy is a holistic look at the role of food in society, culture, politics, environment, economics, art. It’s the web of relationships between our plate, our planet, and our people.
Today i would like to talk you about french Grande cuisine, also called haute cuisine. Well.. not really talk, i would like to show you another side of one of gourmet restauration in the region where i live, (what is a catering school in the same time.). And where I work sometimes.
So, everyone likes to go to the restaurant, sip flavoured cocktail and feel eating pleasure (or an culinary orgasm if you prefer. This is the idea of one of my teachers, sorry...).
But do you know what happens in the same moment behind this big massive door?
Exactly, an art. An art of haute cuisine.
The particulary esthetic.
The best attention given to the regional ingredients.
Creativity and originallity.
Strict rules of presentation (well..not so strict)
A culture transmitted to our guests.
And a real history told by the plate.
