Made the best healthy mac and cheese the other night! it tasted so good and I felt great after eating it!
I’ve tried lots of different vegan mac and cheese recipes and I think by combining them all I’ve found the perfect one!
I wanted to share it with you all just to prove that animal products are not, nor will they ever be needed in anything we do!!! Enjoy xxx
You will Need:
3 cups macaroni pasta(Gluten free or normal)
hand full of bread crumbs (Optional)
2 tbsp Italian seasoning (Optional)
For the cheese sauce:
1 Onion
4 Cloves of Garlic
1 tbsp vegetable oil(or coconut oil)
1 Cup chopped Cauliflower
½ cup chopped Pumpkin
½ cup soaked cashews
The juice of 1 lemon
1 tbsp Tahini
1 tsp miso paste (Red or White)
1 tsp Dijon Mustard
1 tsp garlic powder
½ tsp turmeric
¼ tsp pepper
¼ tsp salt
1 cup of Plant milk – I used Soy
1/4 cup Nutritional yeast (optional)
(Note these are a lot of ingredients if you don't have them all thats fine just improvise or use less, just keeping in mind it might not taste as cheesy)
Step 1
First Pre heat your oven to 200 Celsius
Then set 2 pots of boiling water and cook your cauliflower and pumpkin until soft enough to blend
In the other pot cook your macaroni according to packet directions
Then heat oil in a pan and fry your onion and Garlic until lightly golden brown
Step 2
When Cauliflower and pumpkin are soft place in blender along with the garlic and onion and all other sauce ingredients and blend until smooth
Step 3
When Macaroni is cooked place in a baking dish and pour over the cheese sauce
Then top with bread crumbs and Italian seasoning and place in the over for around 15-20 minutes until crispy on the top
Step 4
ENJOYYYY I topped mine with a bit of crispy kale (that I heated in the over for our 10 minutes) and some BBQ sauce 😊
