Channa flour does it again! This recipe makes hearty sugar cookie or chocolate chip cookie. These cookies are high protein with less carbs (mostly in the sugar not the flour). They're also a good source of fiber, calcium, and iron without cholesterol! Since they're gluten, soy, and nut free, and vegan, almost anybody can enjoy them.
Wet ingredients:
1/4 cup coconut oil
1/2 cup sugar
1 egg replacer (or 1 tablespoon ground flax + 1 Tablespoon water well mixed)
1 Tablespoon vanilla extract
2 Tablespoons water
Directions Part 1:
Cream sugar and coconut oil together. Add vanilla, egg replacer, and water.Dry ingredients:
- 1 1/2 cup channa flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
Directions Part 2:
Sift dry ingredients together. Add to wet ingredients. Stir! Add chocolate chips if desired or ungranulated sugar or cinnamon on top before baking.Yes, the dough supposed to be like cement. Don't worry, it makes good cookies. The dough should taste and smell like icing.
Shape into 12 balls and bake @ 350 for 9-15 minutes, set a timer, dab while waiting. Let cool for a few minutes, serve with mylk and enjoy!
