A popular Naan bread recipe, which is usually consumed by Chana Masala(curry), from Indian cuisine. Amritsar kulcha is a potato cluster recipe which is a popular bread recipe from a city of Amritsar,Punjab.
Amritsar Potato Kulcha is a traditional Punjabi recipe. Amritsar potato Kulcha is mainly called naan (flat bread), because it is very popular in Amritsar (Punjab), its name is Amritsari Kulcha. This is a type of homey pizza filled with masala potatoes. Amritsar Potato Kulcha is a delicious Indian recipe that serves as the main,breakfast or snack.
Ingredients:
- 2 cup Maida/All Purpose Flour
- 1 tablespoon oil/ghee 1cup curd
- 2 tsp Active Dry Yeast
- 2 boiled potato
- 1/2 onion, cumin powder ,coriander leaves, green chilli chopped
- 1 tsp garam masala,chat masala
- 1 cup curd.
Method:
1. To prepare the dough, take a bowl and mix dough in it. Add some baking powder, baking soda, ½ cup curd and refined oil/ ghee . Add sugar and salt to the flour and mix it well with your fingers. Add warm milk to the dough and knead the mixture to form a dough. Cover it keep it aside for 2-3 minutes.
2.To fill the kulcha, take mashed potatoes in a bowl. Mix finely chopped onion and green chillies with mashed potatoes. Add chat masala, coriander leaves, red chilli powder and cumin powder into it. Add the salt according to taste and mix the ingredients with a spoon.
3.Now take the dough and make a circle shape by dividing it into equal parts and then rolling it using the rolling pin. Spoon the filling in the center of the dough and close the rug. Sprinkle some maida(flour) on it and turn it over again into the paratha.
4.Now place it in the preheated tandoor for five minutes and serve it with curry(Chole) and butter.
