Hello Steemian! Where the heck did this month go?
It’s been a busy month to say the least, and sometimes that busyness turns into excuses. I’ve been a little absent recently, because I have to admit to you all that my healthy eating routine has fallen by the wayside a bit. I can see myself starting to pick back up some of the old habits I had when a healthy lifestyle wasn’t a priority. Too little sleep, too much caffeine, skipped workouts and more takeout. Oh, and more Girl Scout Cookies, but luckily that’s just a one time per year thing. I can’t resist.
I know what I need to do to get back on track…
It’s time to take charge of my kitchen again!
So today I have for you a lunch meal. A delicious, fresh salad. Nothing too crazy, nothing too inventive. Just a good, solid healthy meal. Plus, I love the colors of fresh produce, so I had to share. I want to print this picture and put it in my kitchen.
Turkey Salad
Homemade Creamy Balsamic Dressing
#Ingredients
– 1/3 cup balsamic vinegar
– 1/3 cup tahini
– 1/2 Tbsp extra virgin olive oil
– 1 garlic clove, finely grated
– 2 tsp dijon mustard
– pinch of salt and pepper
Directions
Add all ingredients to a jar with a lid and shake together. That’s it! Keep in the fridge when not using. For thicker consistency, add more tahini. For thinner consistency, add more balsamic.
