Hello everyone! Dried fruit balls are pretty popular these days between people who want to eat healthier. They are easy to make, they are a good quick snack alternative and they have A LOT of variations. Today I want to share with you one of my most favorite. I think coconut-almond-apricot combination is amazingly delicious.
For a batch you will need:
1 cup of pitted dates;
1 cup of dried apricots;
1 cup of almonds;
½ cup of shredded coconut;
Soak dates and apricots in cold water for at least an hour or soak them in hot water for 10 minutes if you do not have time. Put almonds into a food processor and process until there are no large chunks. Add soaked fruit and coconut and process until you have an even mass that sticks together. If it does not stick, add some more of soaked fruit (add little by little since it is hard to fix it if the mass is too soft). Form balls with your hands. Roll the balls in shredded coconut if you please. I did not do it since coconut is high in calories but if you do not count, totally go for it! Keep in the fridge.
