There are days when you just need some... Nachos!
I used:
- Late July's organic corn tortilla chips
- daiya's vegan cheddar cheese sauce (the packet from their boxed mac and cheese)
- organic black bean and corn salsa
- green olives
- chopped fresh cilantro
In the oven at 400F (about 200C) for about 5-10 minutes, and... Yum!!
Autumn is here for good, and while I've been going to town eating local fresh apples, I was in the mood for something warm and comforting.
