This simple cucumber salad is a pleasant palate delight. Eat it as an appetizer, snack or meal - it's good anytime!

1 cucumber
1 carrot
1/2 teaspoon salt
1 teaspoon sugar
1/3 cup rice vinegar
2 tsp toasted sesame oil
2 teaspoons hot pepper flakes
green onion & smashed peanuts
I spiralized the cucumber and grated the carrot. Mix all other ingredients and then toss with the cucumber and carrot. Top with a green onion and peanuts. I prefer things spicy so I used my own blended concoction of hot spices. Enjoy!
