What do eat today? Especially breakfast always makes me feel a headache because I often stay up late so it is difficult to get up early. In particular, my husband usually goes to work at 7 am, but I always wake up at 6 or later. Therefore, I have to look for simple, easy-to-make dishes that are still full of nutrients for the family because breakfast is very important. A good breakfast will keep you energized throughout the day.
Today, while looking for ideas on avocado - fruits that are very popular in summer in Vietnam and cost about $ 2 for 1kg of high-quality butter, I found two extremely simple dishes: Guacamole Salads and Grilled Avocado Eggs.
In less than 30 minutes I had a full breakfast and looked delicious. Avocado has a very unique nutritional structure, including fiber and lots of vitamins and minerals, such as B vitamins, vitamin K, potassium, copper, vitamin E and vitamin C. Meanwhile, the proportion of nutrients in eggs correlated well with each other. Egg yolk contains 13.6% protein, 29.8% fat and 1.6% mineral. Protein in egg yolk contains the best amino acid composition, the most complete. Egg-white is mostly water, 10.3% protein, fat and mineral are very low.
So, when combining these 2 ingredients will come out a very nutritious dish!

INGREDIENTS:
Guacamole Salads:
- 4 eggs
- An avocado (about 400gr)
- 1 bunch of smell
- A lime
- ½ tsp salt
- ¾ pepper
Grilled Avocado Eggs:
- 2 eggs
- An avocado (about 400gr)
- green onion
- ¾ tsp salt
- ¾ tsp pepper
METHOD:
Guacamole Salads:
- First, I will boil eggs, boiling time about 10 minutes then take to soak cold water to remove eggshells easier
- Next, I add the avocado, remove the seeds, remove the peel and put in a bowl. Take the edge of the knife and tap it down hard into the side of the pit and then simply turn the knife a few degrees and if the avocado is ripe enough it will release easily from the green flesh.
- Mix avocado and egg yolk until smooth
- Add the lime juice, pepper, salt and coriander
- Let the salad to go in the egg white
Grilled Avocado Eggs:
- Add the avocado, remove the seeds. Take a spoon and remove enough of the avocado flesh to make room for an egg
- Add the eggs to the avocado, add salt, pepper and green onions.
- Cover the baking paper with the avocado, bake for 15 minutes at 200 degrees Celsius
I finished 2 dishes in just 30 minutes. Is it simple right?
