Chicken Wings Made A New Way

I have never made chicken wings like this before. Today is game day! The Ravens will play the Buffalo Bills. Its a fine time to create a Buffalo treat. Traditionally we deep fry them or bake them in the oven. While baking and grilling is no doubt the healthiest way to prepare wings, I was a little apathetic that I would miss the deep fried version. As we age, some of us need to watch what we eat a little more closely. So why not try a little bit of fire tested innovation?
Gone are the days where Ill eat these delectable tailgate treats dripping with oil. At least not anymore on a regular basis. So now it is time to pay attention to all those nerdy little details. Don't laugh now, most of you know exactly what I mean. We are going to enjoy some chicken another way...
Fire Up The Grill

Often you will see me with long sleeves and gloves stirring blazing hot coals with a hammer. Protect yourselves. Its hot! Once my coals are lit and pulled into a pile near the front of the grill, it is almost time to place the grate and the wings on top.

Marinate With Old Bay

Chili powder, old bay seasoning and onion were a few different bags I loaded. Of course my favorite is the Chesapeake Bay's own Old Bay seasoning. I love it and highly recommend it.
Now We Are Cooking

Chicken is done when the temperature is 165 degrees Fahrenheit. If you press on the meat with your finger, a firmness is also a great indicator of your wings being done. A slice to the bone will confirm that for sure, no blood? No wet bubbles? Your'e good to go!!
So a healthy margarine mixed in with hot sauce is easy to make, experiment until you find a blend you like to serve. Back to the nerdy things again...buffalo wing sauce really is just a healthy ratio of margarine and hot sauce. Just ask the original creator of this famous treat back in Buffalo

My Conclusion
John's Peach Cobbler
I've been less of an NFL fan for few reasons lately, especially when its politicized. Nevertheless the Ravens won and the wings were tremendous. My cousin John brought a beautiful Peach Cobbler for dessert. Delicious, buttery and the perfect compliment to a rainy day. Did I mention he picked up the peaches personally from the orchard himself? Next game day is actually on Thursday and I'm leaning heavily towards the "More Cowbell" Sandwich for Cincinnati. Stay tuned and if you don't know what I'm doing this explains it all
