This is EK's Crack Salsa, named for its addictive goodness:
Makes a bunch so share!!!
- 2 cans black beans, rinsed and drained
- 2 cans white corn, rinsed and drained
- 3-4 cans Ro-tel (diced tomatos and green chilies) drain slightly
- 1 diced red onion
- 2-3 cloves garlic diced or pressed
- chopped fresh cilantro to taste
- 4 avocados chopped
Blue corn chips or the bite size gold tostitos (if you can find them anymore) are the thickest chips to handle the weight of this hearty salsa.
