Feeling rather hungry this morning , I decided to throw together a wild venison steak and garlic mustard greens omelet . I started with some venison steak strips, onion and red peppers sauteed in butter. Then I beat (some fine farm fresh eggs that I had been blessed with last night)with just a hint of milk for fluffiness and poured them in my well buttered pan!
I then waited for the precise moment and added the venison ,pepper and onion mixture and fresh garlic mustard I picked this morning!![IMG_20170605_103514.jpg] (
I added some mild cheddar cheese and folded close my creation. I then add a table spoon of water and cover immediately . Let sit for a minute or two on low heat and its ready! I then plated it and garnished with fresh garlic mustard greens ,onion tops and fresh chive flowers.
I then sat down with my wife and enjoyed. It was absolutely fabulous and I enjoyed every bite . Well I am
