Today let me share a viand that may sounds and look like new to me. Aros Valenciana a Filipino version of Paella which is popular in Latin America. Maybe this dish was made because the Philippines once ruled by Spaniards. I would say that several dishes in the Philippines had been influence by it's past envaders.
However, we made the rice separated into it just like it is a partner for rice. The ingredients are basics and I think that for a first try it is not bad. Here's what we prepare.
Note: We've replace some ingredients cause I cannot find it here at a nearby store.
Ingredients:
1/4 kilo of Chicken
1/4 kilo of Potato
5 cloves of garlic crushed
1 small red onion slice
1 green bell pepper
2 red chili
Calamansi extract
Anato Seeds or Atsuete
Pepper, salt for seasonings
Cooking Oil
Instructions:
1.Cut the chicken and wash it thoroughly. Set aside.
2.Saute atsuete seeds on cooking oil until the color from it releases. Take out all the seeds.
3.Saute garlic, onion, red and green chili for few minutes. Then add the chicken, add some salt and allow it to cook on it's own to release its juices.
4.Add potatoes, calamansi, salt and pepper. Let it simmer until the chicken cooks completely. Serve until it's hot.
At this point, you can now add and mix the rice like paella. But ours we decide that we don't mix the rice together so it looks like this.
Ps. Sorry for the poor plating preparations, we are excited to eat and it so savory and has a richful flavor. We had prepared spicy with calamansi soy sauce. Thanks for dropping by and hope you like it :)
