When summer season starts when I cooked rice and have left over at night it will be soon to spoil. Maybe because the hot weather creates moist and when rice is left over night it makes the bottom of the rice cooker to moist which causes it's spoiling.
Luckily I have a trick which I got from my mama. This method was a part of our childhood and I'm glad at my age I'd still practice it. So why am I often do it every summer? The answer is, I need a direct heat from the sun so I can make my left over rice to dry.
Preparation
Using left over rice, I mashed the rice and washed it with running water and drain several times until water becomes more clear. It is important to wash the rice thoroughly and drain the water using a strainer.
I let it hang for few minutes then I start to sprinkle the rice on a flat surface like this. Baking tray is good too. I sprinkle the rice all over the tray and allowed some spaces us much as possible to make the drying faster.
Since it was tremendously hot right now in the Philippines, drying won't take that long. Drying the rice can achieve faster if done with thin layers. If I made it with thick layer like this, I'm gonna check the rice if it's dry even and tried to scattered the dried rice and the left undried rice as well. In that way the drying process is more faster.
I've notice that it's kinda dried up like inside an oven. That heat directly from the sun can actually cooked an egg. Summer season just started so I guess I can make more puffed rice for 2 months lol :)
Frying
Heat your frying pan on low to medium setting. Make sure that the oil was already hot before dropping the dried rice. If you see the rice to puffed stir it so that it won't burnt.
You must fry it on small batches and remember to drain excess oil. I highly suggest to use a lot of oil when frying it but unfortunately I don't like that process. I'd like to do it slowly and little by little so I can control the amount of cooking oil.
Serving
Once cool down you can now add sugar, powdered milk, cocoa or even any chocolate powder. The sweetness will depend on you, personally I don't like it too sweet so just 1 tbsp of sugar and 1 tbsp of powdered milk was okay.
If you wished to make it like snack bar, you can caramelized sugar then pour it in and stir so the sugar coat all the puffed rice. Add some nuts, chocolates or cut fruits to add more flavor.
I can say that sugar alone taste great better try this at home and do not waste left over rice anymore. Cheap snacks for everyone! That's all for today, thanks for reading my story today and keep safe! ❤
