Cooking From Scratch
I didn't add frosting because I'm trying to cut back on sugar. This quick bread taste moist enough without icing.
My Grandson, who is almost 13 years old, asked me to make sweet potato quick bread today. I said yes but he would have to learn how to bake the bread so next time he wants some he can make it himself.
10 x 14 inch glass dish, I doubled the recipe, you'll need a smaller baking dish or 2 bread pans
Ingredients
- 2 - 1/2 cups organic unbleached all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon freshly ground cinnamon
- 1/2 teaspoon freshly ground nutmeg
- 1/4 teaspoon salt
- 3/4 cup coconut oil
- 1 cup of white sugar
- 4 eggs
- 2 - 2/3 cups cooked mashed sweet potatoes
- 1 teaspoon vanilla extract
- 1/2 cup coconut flour
- 1 cup chopped walnuts
Mix all dry Ingredients together
In a blender mix all wet ingredients together including oil, sugar, and nuts. My family hates nuts but I love them so I sneak them in and finely ground walnuts add a nice nutty flavor to the mix. You can add the nuts after you add everything together if you want the nutty crunch.
Mash or blend your sweet potatoes
My Grandson, I call him my prep-boy and I peeled and cut up potatoes, dumped the lot in a pan of boiling water and cooked till tender. Drain and save the water, it makes a great soup stock. Set the hot potatoes aside to cool.
Blend All Wet Ingedients Together
This includes, eggs, vanilla, oil, and sweet potatoes.
Add dry ingredients together, flours, spices, salt, baking soda, and baking powder.
I use aluminum free baking powder. I don't use aluminum cookware, foil or ingredients because aluminum has been tied to degenerative brain diseases and immune system dysfunction.
I buy a lot of my bulk ingredients on eBay.
Mix Dry Ingredients With Wet
My Grandson mixed 1 cup of flour mix to wet mixture at a time, scraping the bottom and the sides of the pan often. Grease your baking dish and dust with flour, set aside. Once dry and wet ingredients are throughly incorporated scoup mixture into baking dish.
