INGREDIENTS
1 kilo beef caldereta cut
1piece beef bouillon cube
5 cups of water
3 tablespoons desiccated coconut
230 tidbits
2 tablespoons ginger, minced
1 piece green chili chopped
1 medium onion minced
4 tablespoons sweet shrimp paste (bagoong)
1 stalk lemon grass white part only chopped
2 tablespoon garlic minced
2 tablespoons oil
Procedure:
Place caldereta cut beef and tidbits in a casserole with 4 cups water. Make sure meat is fully covered.
Bring the mixture to a boil then cover and simmer over low heat until beef is tender, about 1 hour. Drain meat and pineapples then discard stock. Set aside.
In another sauté pan, heat oil and sauté ginger, onions, lemongrass and garlic until fragrant, about 2 to 3 minutes.
Add in shrimp paste, green chili and desiccated coconut. Stir-fry mixture briefly, about 1 to 2 minutes then add in remaining 1 cup water and beef cube. Bring to a simmer.
Add in pre-boiled caldereta cute beef and pineapple tidbits into pan. Bring to a boil and mix well before serving.
