Totsong bangus is our dish for lunch, i would like to share how i cooked it.
Here are the ingredients:
1 whole bangus, scaled, gutted and cut into serving pieces
salt and pepper to taste
cooking oil
1 onion, peeled and sliced thinly
3 cloves garlic, peeled and minced
1 thumb-size ginger, peeled and julienned
2 tomatoes, chopped
1 cup vinegar
3 squares tahure (fermented bean cakes)
½ cup water
½ cup tausi (fermented black beans), rinsed and drained
Procedure:
- Fry the bangus, frying this fish is really challenging because the oil keeps on splashing. Everytime i put the fish into the oil or i flip it i turned the fire off then cover the pan immediately before turning the the fire on again. Set aside the fried fish.
- Pre-heat another pan, put some oil. Sautee ginger 'til fragrant, add garlic until light brown, next the onion until translucent and the tomatoes until cooked. Keep on stirring.
- Pour the mixture of vinegar, tahure, black beans and water, also the fried fish. Cover it and leylt it simmer for 5 mins.
- Add salt and ground black pepper to taste. Tun off the fire and now it is ready to be served!
