I'm still feeling a little bit under the weather but I'm so much better than the past few days. I am now able to cook a decent meal for my family as opposed to fried or canned food I fed them when I was still sick.
This is the first time I cooked salmon so I kept it simple. I also don't think I could last that long in the kitchen without having to rest.
I actually just originally planned on just frying the salmon but since it's quite expensive, I thought of making it a bit more presentable.
So after rubbing salt and pepper om the salmon, pan fry it for three to five minutes on each side. Set it aside.
On a different pan, melt butter enough to sautee onion and garlic. Squeeze about five to six pieces of calamansi when the onion is already pale. Then pour one whole pack of thick cream and about a cup of grated parmesan cheese. Let it simmer for a couple of minutes. Then add in the fried salmon. simmer for maybe two minutes and serve hot. Sprinkle some malunggay powder.
It tastes good. I mean not bad for someone who isn't feeling well. My husband commented that I could just use milk instead of cream but nonetheless he still loved it. He better. This is what one may call a labor of love.
