A semifreddo is a molded frozen dessert that remains fairly soft and is similar to an ice cream though is made without an ice cream maker!
This wickedly easy and super delicious dessert will have everyone swooning and it is perfect for a dinner party!! The roasted almonds adds a bit of extra crunch that contrasts nicely with the desserts creaminess!

Ingredients
- 200g almonds, roasted (extra for topping)
- 2 packages non dairy whipping cream
- 2 tablespoons almond milk
- 1 cup condensed milk
- 1 cup caramel sauce (extra for topping)
- 2 free-range egg yolks
- 2 tablespoons sugar with vanilla flavored
- twix chocolate caramel cookie bars (for topping)
Method
- whisk the cream with almond milk, until soft peaks form (for about 5 minutes) and put in the refrigerator
- whisk the egg yolks with sugar until thick and pale
- add milk, gradually and whisk
- add caramel sauce, gradually
- fold cream into the caramel mixture and whisk
- add roasted almonds and stir well
- scrape into a lined loaf pan and place in freezer
- freeze overnight( or longer-you can keep this in the freezer for a month, but I am sure you will eat it sooner!!)
- to serve, remove the semifreddo from the freezer and unmold
- set aside for 5 minutes to soften slightly and slice
- serve with twix chocolate and caramel sauce!
