In Greece with serve this, as a main dish, but if you like you can serve it as a side dish. Its very easy, delicious, vegetarian, summer plate full of lovely flavors from the vegetables and stunning aroma notes from herbs !
Ingredients
- 4 potatoes
- 1 onion
- salt
- pepper
- 4 zucchini
- 2 carrots
- 2 cloves of garlic, minced
- olive oil
- 3 tomatoes, chopped
- parsley
- mint leaves
- thyme
- grated zest of a lemon
Method
- preheat oven to 220*C
- chop the zucchini, the onion, carrots, potatoes in to slices and transfer to a baking pan
- add garlic, olive oil, mint leaves, parsley, lemon zest, tomatoes, salt and pepper and toss
- add half glass of water
- bake for about 90 minutes to 180-200*C ( until the vegetables get golden brown and crispy)
- serve with fresh parsley, thyme and ground pepper
