Good evening! Tonight I made a family favourite so I thought I’d share the recipe with you all!
1 pkg ground beef
1 medium golden onion
2 Grated carrots
1 Tsp garlic powder
1 Tsp oregano
2 Tsp parsley
1 Tbsp Worcestershire sauce
1 Cup oatmeal
1/3 Cup ketchup
2 Eggs
3-4 large potatoes
2 Tablespoons sour cream
Splash of milk
Handful of grated cheese
Preheat oven to 350 degrees
Chop up the onion finely. In a bowl mix in all of the ingredients in the first section. Roll into 12 balls and place in a muffin tin ( I personally like to place them in cupcake papers for easy removal out of the tray). Before placing in the oven squirt a small bit of ketchup on the top of each “cupcake” Bake for 35-40 minutes.
Chop up the potatoes and bring them to a boil until ready to mash. Drain the excess water. I prefer to blend them with my electric beaters for a smoother “icing” like consistency. Add the sour cream, cheese, and milk and give a good stir.
Once the “cupcakes” are ready I fill my icing bag ( you can also use a ziploc bag and cut a small hole in the bottom corner) with my mashed potato mix and put it onto of the meatloaf cupcakes. You can garnish with dried parsley and grated cheese!
