I will give you the recipe of fresh cheese that is great for those who are on a diet or not.
FOR 1 CHEESE
.1l of fresh milk (I use low fat milk)
.liquid rennet
.Heat the milk to 37 °,
.Put the rennet (follow the instructions of the quantity) and stir ,
.wait about 30/35 minutes
.put in a cheese recipient and drain the liquid
.rest for 1/2 days in the fridge .
After that time put on a plate and serve
