Follow these steps and become the most famous frying sensei in the world.
1. Peel the potatoes (if you are in Colombia use sabanera potato or R12) and cut them into canes of about 1 cm thick.
Wash them well.
Prepare a pot with cold water and salt, add the potatoes and heat over high heat until it boils. Then let them cook for 20 minutes and remove them.
Let them cool and put them in the freezer for a few hours.
When they are frozen (this is done to make them dehydrated and more crispy), remove them and fry them in previously hot oil and on high heat. Insert them carefully as the oil may splash when the potatoes are frozen.
Let them fry until golden brown. Remove them and put them on absorbent paper to remove excess fat.
If you want to add a touch of "extra" flavor, sprinkle salt and paprika.
