This is a healthy and nutritious dish that is consumed by poorer people in Korea, as adding rice and bean sprouts to the beef makes it go further.
Some of my favorite dishes are the ones eaten by peasants like soup for instance.
Even when I make less expensive dishes, I feel that quality is very important so I prefer organic beef and fresh bean sprouts.
2 Tbsp. soy sauce
2 garlic cloves, chopped tiny
2 scallions, both white and green chopped
1 1/2 Tbsp roasted sesame seeds
1 Tbsp. sesame oil
black pepper
5 ounces of lean beef chilled (I prefer organic)
1 Tbsp. vegetable oil
1 cup short grain rice, rinsed and drained
8 ounces of fresh bean sprouts
very thin strip of red chili for garnish (optional)
Mix the soy sauce, garlic, scallions, sesame seeds, sesame oil and pepper in a bowl.
Slice the beef very thinly, stack it, and slice into strips. Marinate in the soy sauce mixture for at least 1 hour turning it a few times to coat the beef.
Heat the vegetable oil in a large saucepan. Add the beef and stirfry for 2-3 minutes until darker brown. Stir in the rice and bean sprouts and add 1 1/2 cups of water. Bring to boil. Stir and cover and simmer on low heat. Cook the rice for 20 minutes without removing the lid. Turn the heat up on high for 30 seconds and turn off heat and leave it with the lid on for 10 minutes. Serve with red chili garnish if desired.
