Dumpling soup is one of my favorite indulgent treats and it is so versatile because you can make it simple or add many type of delicious ingredients.
1 carrot, chopped
1 onion, chopped
1 garlic clove, chopped
6 water chestnuts, chopped
4 ounces of chicken
1 cup of cooked shrimp, shelled
2 Tbsp. soy sauce
1 Tbsp. sesame oil
pinch of Korean chili powder or (cayenne pepper mixed with paprika option)
30 wonton wrappers
7 1/2 cups chicken stock
scallions, chopped to garnish
Put the vegetables and three-quarters of chicken and shrimp in a food processor. Dice the remaining chicken and shrimp.
Add the soy sauce, sesame oil and a pinch of Korean chili powder to food processor and mix to a smooth paste.
Spoon a little of the vegetable mixture into each wonton wrapper. Wet the edges and press together to make it seal.
Bring the stock to a boil in a saucepan. Add the dumplings, chicken, and shrimp.
Simmer for 10 minutes and garnish with scallions before serving.
