Home made lettuce wraps are much more scrumptious when enjoyed with loved ones. I made this recipe tonight for my family and it took me 15 minutes from beginning to deliciousness.
Ingredients:
2 chicken breasts
1 head of romaine lettuce or iceberg lettuce
3 stalks of green onion (white and green portions)
6 Tbsp. coconut aminos
1 Tb. honey
2 Tbsp. olive oil
1/2 cup of chopped carrots
2 Tbsp. fresh ginger chopped finely
Directions:
Heat olive oil into a low to medium heated non-stick pan.
Slice chicken into small pieces and put it in the pan with olive oil for 3 minutes.
Add ginger, green onions, carrots and stir fry a few more minutes.
Add coconut aminos and honey.
Serve on top of freshly washed lettuce leaves for a delicious gluten free healthy dinner.
