These are green beans that are fresh from the garden. You can also use asparagus too for this nutritious recipe.
Ingredients:
2 large eggs
1 cup bread crumbs
½ cup grated Parmesan
1 bunch asparagus or green beans trimmed
Recipe:
Preheat oven to 375 degrees. Whisk eggs in a shallow dish, long enough to fit the beans/asparagus. Combine bread crumbs, cheese, salt and pepper in a similar dish. Dip the vegetables in eggs, then coat with break crumb mixture and place on a baking sheet lightly coated with olive oil. Bake 15 minutes until golden brown.
